Wadi Rum is a spectacular region to explore in southern Jordan, with lots of outdoor activity options. To elevate the experience, make sure also to try out the local Bedouin version Barbecue – ‘Zarb’. This traditional dish is combines mostly lamb, goat, chicken and an assortment of seasoned vegetables, cooked for hours in an ‘earth oven’ – a coal-operated cylindrical oven (usually made of a used barrel) set under the sand. This slow cooked dish generates tender and smoky meat and flavored vegetables. It is both a delight and a special cultural experience.
